fig-bell pepper pasta

hey everyone :)
since i discovered some nice gf noodles i'm experimenting a bit more
with sauces. here is one of the results...

some pics whith my phone :o





ingredients:

* 3 bell peppers
* 1 small onion
* 5tbs tomato sauce
* 1tbs rice cuisine/ vegan cream (optional)
* 4 figs
* 1tsp agave syrup
* pepper

cut up the onion into small pieces and roast them, deglaze it with the tomato sauce and rice cuisine.
dice the bell peppers and figs and add them too. simmer it for a few minutes, add agave syrup and pepper. serve with pasta, rice or whatever looks yummie for you & enjoy <3

vegan scrambled eggs






hey everyone :)
i wanted to eat something hearty on my gf bread and was searching for something new :)
some years ago i loved scrambled egg on bread, so i tried to do a vegan version...




a friend told me that i can't call it scrambled egg, 
when there is obviously no egg in it.
so it's actually more like a scrambled tofu :D 
sounds pretty weird O.o



the scrumbled tofu or however goes perfekt with a fresh salad!
mine was with dates and a nice tahini dressing :)




ingredients:

* 200g natural tofu
* 2tsp dijon mustard
* 2tsp soy sauce
* 3tsp chive
* 1/2tsp cayenne pepper
* 70ml rice milk
* 1 small onion

in a bowl crumble the tofu, add all the other ingrediens except the and onion. let the tofu steep for some minutes so the taste can get more intense. saute the onion and add the tofu mixture. let it simmer until the required consistence has achieved. eat with bread, salad or simply on its own & enjoy <3

fluffy buckwheat pancakes

hey everyone :)
something new for my soulmate pancake lover:
my gluten free fluffy pancakes :)


for those who wonder: i usually eat my pancakes dipped in smoothie :)
this one is with banana, rasp- and blueberries :)







ingredients: (for 6 pancakes)

* 1 banana
* 1 tsp water
* 100g buckwheat flour
* 50g oats
* 100ml rice milk
* 50ml water
* 40g cane sugar
* 2 tbs agave syrup
* 1/2 tsp baking powder
* dash of vanilla powder

mash the banana with the teaspoon of water and add the buckwheat flour. grind the oats until they become flour, same with the cane sugar (just because it'll give the pancakes a nicer texture, not absolutely necessary). mix everything in a bowl or in your mixer, just how you want :) 
heat up a bit of plant oil in a little pan. 3-4 tablespoons dough will make one pancake. bake & enjoy <3

mango - raspberry smoothie


hey everyone :)
one thing i can't live without: my every morning smoothie *_*
so here is one of my favorite ones...




i love having my smoothie in a bowl and not in a bottle,
also looks sooo much better haha :D




ingredients:

*3 bananas 
*1 mango
*120g raspberries

combine the bananas, a half mango and 60g raspberries in your mixer. put in a bowl and use the diced hald mango and the rest of the raspberries as topping & enjoy <3

banana chocolate bread

hey everyone :)
i'm not sure if this should be called bread or cake O.o
hopefully it's swallowed before anyone can ask :D



 


ingredients:

* 1,5 banana
* 50ml water
* 200g grounded oats (i used gluten free ones)
* 50g buchwheat flou
* 50g corn flour
* 200g cane sugar
* 100g chocolate
* 3 tbs corn starch
* 1 tbs cacao
* 1 tbs plant oil
* 2 tsp baking powder
* 1/2 tsp vanilla powder
* dash cinnamon

put the banana and the water in the mixer and mix until smooth. Put all the other ingredients into a bowl, now add the banana-water-mix. stir well until you get a creamy texture. cover  cake pan with baking paper and fill in the batter. bake for about one hour at 180C. let it cool down a bit so you can easily remove the bread from the pan. cut it into slices & enjoy <3 i added some soy yoghurt and berries, also very yummie...

yogurt pancakes

hey everyone :)
so this seems to be my first blog post, pretty exciting! :)


sorry for the unaesthetical pics, they taste better than they look, promise :D

                                               




ingredients:

* 200g flour of your choice, i used spelled flour
* 200ml rice milk
* 6 tbs soy yogurt 
* 2 tbs agave syrup
* 1 tsp baking powder
* 1 tsp vanilla powder
*125g blueberries

combine the first 5 ingredients in your mixer till smooth, or just stir them in a bowl if you don't have one :) then carefully fold the blueberries so they don't get smashed. 
now heat up a half tsp plant oil in a small pan. put in some dough and bake the pancake on low heat until the top isn't liquid anymore, then flip and bake from the other side :) repeat until all the dough is gone & enjoy <3
